Refreshing (and Healthy!) Summer Treats from Aicacia Young

Here she shares a couple of her favorite recipes for healthy and refreshing treats.Coconut Cherry Vanilla PopsiclesMakes 4-6 PopsiclesCherries are awesome because they contain anthocyanins – antioxidants that can reduce migraines, pain, and inflammation in your body.
1 can of full fat coconut milk, refrigerated overnight
1 cup of fresh, pitted cherries
1 tsp of vanilla extract
2 Tbsp of maple, brown rice, or tapioca syrup (optional)
Popsicle molds or small solo cups and popsicle sticks
Add all ingredients into a blender and blend until smooth.
Pour mixture into popsicle molds or tiny solo cups with popsicle sticks.
Freeze for 4 hours or overnight.
Run water over the molds or cups to release popsicles, and enjoy!
Matcha-Colada Smoothie Bowl
Photo and recipe courtesy of Serena of the Domesticate Me blog; Makes 1 smoothie bowlThe best part of smoothie bowls is choosing from an amazing array of toppings like cacao nibs (my favorite), shredded coconut, chopped nuts, chia seeds, fresh fruit, etc. This ones makes a great breakfast!
1½ cups frozen pineapple
1 ripe frozen banana
1 cup greens of your choice
½ cup unsweetened coconut milk (The kind in the carton, not the can)
2 teaspoons matcha green tea powder
Squeeze of fresh lime juice (optional)
Place all the ingredients in a blender.
Blend until smooth. This can be a little tricky because this is a THICK smoothie.
Take your time, and be patient with the blender. If you have a Vitamix, use the plunger to stir as you blend. If you don’t have a Vitamix, you may need to stop the blender a few times and stir things with a spatula.
Pour the smoothie out into a bowl and add toppings of your choice.
